5 a day or 10 a day? Just eat more!

Today’s headlines induced guilt for the 73% of UK adults that fail to consume 5 portions of fruit and vegetables a day (NDNS data, 2016).  A new study suggests that while getting your 5 a day is good, eating 10 portions a day offers the most protection against chronic diseases like cancer and cardiovascular disease.  Given that most of us struggle to achieve just 5 portions, is the reporting of these health messages doing more harm than good?   We all know that fruit and vegetables are good for us.  Many studies have shown that those who eat diets rich in fruit and veg have a lower risk of obesity, type 2 diabetes, cancer and cardiovascular disease.  The World Health […]

Courgette, carrot and feta fritters with mint

I recently went to Kefalonia for my honeymoon and we ate these delicious fritters with our meal one evening, so I decided to give them a go when we got home.  Vegetable fritters are versatile and a great way to get your 5 a day but the addition of feta and mint gave a real taste zing which makes them fantastic for dinner parties (use the leftover mint for caipirinhas!)   Makes about 8 fritters   You’ll need 1 large courgette, grated 2 carrots, peeled and grated A handful of shredded fresh mint leaves Black pepper 1 egg, beaten 8 slices of feta cheese, about 2cm square and 0.5cm thick 1tbsp rapeseed oil   How to Mix together the courgette, […]
